Are Some Foods Healthier When Cooked?


When it comes to eating healthy, most experts will advise you that raw is best. The raw food craze has some people believing that cooking saps the nutrition from all foods. That may not necessarily be the case. Some foods do actually get healthier after they are cooked.

Tomatoes are great raw in a salad or even by themselves. However, if you want to help fight prostate cancer, cooking the tomatoes increases the amount of lycopene. Lycopene is a chemical that is known for it’s cancer-fighting characteristics.

Carrots are great by themselves as well, either as a snack or part of a salad. However, once these veggies hit the heat, the amount of carotenoids increase. Carotenoids are a phytonutrient that helps improve vision and fight cancer.

Mushrooms are high in nutrients and vitamin D and good when raw. However, cooking mushrooms increases the amount of vitamin D and other nutrients held within. Certain studies have linked mushroom consumption with lower rates of breast cancer in women.

Peaches are a sweet treat raw. However, throwing them over some heat increases their vitamin C and folate exponentially. You can skip the stove by buying canned peaches because they are already cooked.
